I bet it might work!
A lot of fluid can get pumped down into the calipers, and the brake lines are so small inside, they don't hold much fluid at all.
I know I'd give it a try.
When I replaced my brake lines and bled the new ones, though, I went slowly and systematically, and got a great bleed pretty easily.

I just replaced a front MC and rebuilt a rear MC on a Suzuki GS1000. After I mounted the MC I filled the reservoir and pumped the lever/pedal 4 times each to bleed the MC's. I thought about trying the method you mention but frankly less than 30 seconds to bleed the MC as opposed to removing the calipers, prying the pistons in then replacing the calipers would take 10 times longer.
