Its a visual thing for me.. The stock tire looks anemically narrow.. My last ride was a '90 Kawasaki ZX1100 with a 170/60VR17 tire on a 5.5in wide wheel, it looked great..

Not as well as they could if they had narrower tires.
The problem is that as power increases beyond a certain point sticky sport bike tires wear faster than is considered acceptable and the only way to improve tire life is to either decrease the power to a more sensible level, make the tires less sticky or use wider tires and accept the increased turning effort.
That may be necessary when you can design everything else around it but when you are dealing with a bike that wasn't designed around excessively fat tires it is just a way to make it work less well.

All bikes are different from each other, and are dessigned, by the manufacture, for a specific function. Tires are specified for that function. Re-designing a bikes funtion involves more then tire choice. Drag slicks don't work well in the twisties, and street tires don't work well on the drag strip. If "looks"are what you are after, go with what you like the look of. But if you want performance, it may not be the same tire.

Size does matter but it isn't bigger vs smaller it is correct size vs incorrect size and too big is as bad as not big enough.
