Agree about the idea that people who are used to V-twins don't run Japanese bikes like they were made to. Those of us who started riding on small ones have no problem revving it to the moon; it's what you had to do to get the fun out of it.
That said, the 84 1200 Interstate I had would suck the headlight out of my 77 1000 in a mid-range roll-on, even with the added 150-200 pounds. The 1000 needs to be revved, the 1200 just jumped when the throttle was snapped.

Drag racing your Wing.
I would suggest first, getting your engine running the best it can.
Then , set your clutch up better than perfect.
Then , Practice!
The more you do it - the faster you'll get.
I have seen experienced racers beat faster machines many times.
After you get everything that you can out of your bike the way it is...... then start the improvements.
wheelbase, gearing, tires, aero, etc....
There is really no use "making it faster" if you are not already using 100% of what is available.
