If the bike runs better under throttle and by choking it a bit, my wild guess is that it’s running lean and will need to have the carbs cleaned, at the very least. This assumes electrical, ignition, timing, and the entire fuel system upstream of the carburetors are to spec. You can try an in situ cleaning before pulling the rack, to see if that helps.

Maybe check the headers for excessive blueing and take a look at the plugs (clean=lean, dirty=rich). If you smell gas and suspect it’s running rich, take a look in the plenum for fuel. The sage advice previously given to use a spray bottle or IR thermometer to check the headers is excellent.

It’s commonly advised that backfiring (which is a discussion in itself) heard through the air box means the bike is running lean, whereas if it’s heard through the exhaust (after burn) would indicate that it’s running rich.

I suggest that you ONLY use Seafoam in accordance with the manufacturers instructions on the can. I've had to drain a couple tanks where a full can was dumped in to a gallon or so. Carbs really don't like that.
