I've been wanting to do this setup for so long now and I just need to take the first step or I'll never do it. I've been searching around on ebay for the carbs and I get a number of different results.
Can anyway with experience with them be able to tell me if these would not be the ones I want for any reason?

Those are them alright. Call them and make sure they come with 28mm chokes, 110 main jets, 47 idle jets, and 185 air correctors.
The jets aren't all that expensive but the chokes (main carb throats) are real pricey. Depending on the air filter and exhaust you end up with - you could end up with 50 idle jets, and either bigger mains or smaller air correctors. It's possible (but unlikely) that you would need to go leaner than Randakk's baseline jetting.
1 step in idle jet size is .03mm (47 to 50), mains are .005mm (110 to 115), and air corrector is .02mm (185 to 165 would richen the mix at top end).
