When I run the engine with the radiator off, I connect a length of hose to the bottom connector, then fill the hose with coolant as much as goes in before connecting the hose to the top connector as seen in this photo.....

I then just keep an eye on the temperature gauge, but that said, I don't run the engine for long. Did this when I wanted to check the crankshaft seal to check for leaks. Not done it with the engine out of the frame though!

I've done this by connecting an old car radiator. Some futzing around with hose adapters, and of course, a spare radiator. If the radiator is big enough, you can run it for a long time without a fan, if you need to. Put the headers on, too.
You do need to understand the basic wiring needed so you can cobble it up: solenoid to battery, 12v wire to coils, etc. No need to connect the reg/rec for testing the engine, unless charging issues are a concern. Then you really do need to understand the wiring. Throttle you can do with your hand.

Unless you plan to test or operate numerous engines I have found it easier just to use the frame. the wiring harness with the ignition system and all the other subsystems are too much to develop for a one shot deal. I used to keep a un titled roller just for this purpose when I was playing with numerous engines.
